Island Chop Suey
Serves 4
500 grams Pork fillet, cut into 1 cm cubes
4 teaspoons oil
2 teaspoons crushed garlic
2 teaspoons finely chopped fresh root ginger
1 medium onion, chopped
400 grams mushrooms, sliced
120 grams bean thread vermicelli
hot water
1/2 cup water
1 tablespoon soy sauce
Heat the oil in a saucepan. Add the pork, garlic, ginger, onion and mushrooms. Stir fry for 4 - 5 minutes.
Cover the vermicelli with hot water. Soak until soft, then drain. Using scissors cut into 10 cm pieces.
Add the drained vermicelli, water and soy sauce to the pork. Simmer for 15 - 20 minutes or until the pork is tender. |
