Pork & Ginger Stirfry
Ingredients
1 tablespoon sesame oil
1/4 cup cashew nuts
300 g New Zealand Pork stir fry
1 tablespoon grated fresh ginger
1 red pepper, deseeded and cut into strips
2 cups stir fry vegetables e.g. courgettes, red onions
2 tablespoons soy sauce
Schnitzel, fillet and pork mince are ideal pork cuts for stir frying. Cut schnitzel or fillet into thin strips.
Method
1.Heat the oil in a wok or fry pan.
2.Add the cashew nuts, pork and ginger and stir fry until pork is brown.
3.Add the red pepper and vegetables and lightly stir fry until just cooked and still crispy.
4.Add the soy sauce, stir to heat through and serve.
