Pork Kebabs
Ingredients
500 grams pork medallions steak, diced
2 green peppers, diced
2 red peppers, diced
2 yellow scallopini or green courgettes, sliced
2 red onions, quartered
4-8 bamboo skewers, soaked in cold water for 1 hour
Variations:
Other vegetables which could be used are cherry tomatoes, diced apricots, prunes, small mushrooms.
Method
Thread the pork, peppers, scallopini or courgettes and onion onto skewers. Cover and place in the refrigerator.
Heat the grill or barbecue.
Brush the kebabs with oil. Place under the grill and cook, turning, for 8-10 minutes or until the pork is cooked.
