Lamb with Apricots
Ingredients
3 tbsp oil
500g cubed lamb
1 onion, chopped
5 cloves garlic, finely chopped
1 thumb ginger, finely chopped
1tsp ground cumin
2 red chillies, finely chopped
½ tsp turmeric powder
125g dried apricots, cut into slivers
2tsp sugar
Method
Heat the oil in a deep frying pan or wok and stir-fry both the lamb and the onion till the lamb is lightly browned and the onion is translucent. Add the garlic, ginger, cumin, chillies and turmeric, and fry several minutes longer.
Add one cup of water and simmer the lamb very gently for 10-15 minutes, uncovered, stirring frequently, till the liquid has reduced and the lamb is tender.
Meanwhile, in another, smaller saucepan, simmer the dried apricots and sugar in ½ cup water till softened. Spoon the apricots and their liquid over the cooked lamb, and serve with fried potato. |
