Lamb Steaks with Moroccan Tomato Sauce
2 Tbsp oil
1 onion, finely diced
2 cloves crushed garlic
1 tsp freshly ground black pepper
2 tsp crushed cardamon seeds
2 Tbsp fresh ginger
2 tsp each ground cumin, corriander, cinnamon
2 x 400g cans crushed tomatoes
1 cup sugar
Heat oil in pan and gently cook the onion and garlic for a couple of minutes. Add the other ingredients and season with salt. Simmer for 20 minutes. Quickly sear lamb steaks in a hot pan, place in a casserole, pour over sauce, cover and cook in a moderate oven till steaks cooked through. |
