Marinated Lamb Rumps
1 pkt lamb rumps2 cloves garlic, sliced
1 Tbsp fresh rosemary leaves
1/2 cup olive oil
2 Tbsp lemon zest
2 Tbsp lemon juice
2 Tbsp white wine
2 Tbsp freshly ground black pepper
2 Tbsp fresh thyme, chopped
Using a sharp knife make a few small incisions in each lamb rump. Insert slices of garlic and rosemary. Place lamb rumps in a shallow dish.
Mix the other ingredients. Refrigerate for a few hours or overnight - turn lamb rumps occassionally.
Drain the lamb, reserve the marinade to heat as a sauce if you wish. BBQ meat on a hot grill for 10 minutes on each side, remove from BBQ, cover and rest for 5-10 minutes before slicing each rump into 6-8 pieces to serve. |
