Pork Loin with Middle Eastern Seasoning
Ingredients
750g - 1 kg pork loin
Middle Eastern Seasoning:
1 cup prepared couscous
1/2 cup raisins, chopped
1 teaspoon cinnamon
1 egg, beaten
Method
Weigh the pork and calculate the cooking time - allow 25-30 minutes per 500 grams plus 20 minutes.
Mix all the seasoning ingredients together.
Butterfly the pork or cut a large cavity through the middle. Fill with the seasoning mixture, tie the pork if necessary.
Place the pork in a baking dish and cook until the juices run clear.
To butterfly pork, slice the pork lengthwise almost through - then open like a book
