OLD DARK CASSEROLE
Add a Kiwi flavour to your casserole this winter. Simmer chuck steak until tender in Speight’s Old Dark
Ingredients:
* 750g Chuck Steak
* 2 Tbsp seasoned flour
* 2 Tbsp oil
* 2 Tbsp tomato paste
* 330ml bottle Speight’s Old Dark or similar style dark beer
* ½ cup beef stock
* 2 Tbsp chopped fresh thyme
* 2 onions, roughly chopped
* 6 cloves garlic, crushed
* 2 carrots, peeled and chopped
* 2 stalks celery, chopped
* 250g mushrooms, halved if large
* Salt and pepper to season
Method
Cut the chuck steak into 5cm pieces. Dust with the flour.
Heat the oil in a frying pan and brown the meat. Transfer to a casserole.
Add the tomato paste to the pan and stir over a low heat until it darkens to a brown/red colour. Stir in the Speight’s Old Dark, stock and thyme. Add to the casserole with the onions, garlic, carrots, celery and mushrooms. Season with salt and pepper if wished.
Cover and cook at 160° C for 1½ - 2 hours until the meat is tender.
to serve
Serve with your favourite winter vegetables. Serves 6 |
