Corned Beef
1kg corned silverside
1 bay leaf
sprig parsley
4 black peppercorns
1 Tbsp golden syrup
1 thinly peeled strip orange rind
1 Tbsp malt vinegar
Put the silverside in a saucepan. Add bay leaf, parsley, peppercorns, golden syrup, orange rind & vinegar. Barely cover with water. Cover and bring to the boil then simmer gently for 1 hour or until meat is tender. Drain. Some of the cooking liquid can be used in a white sauce to serve with the meat. Serve hot or cold with your favourite sauce or chutney. |
