Whitebait Fritters
1 egg, beaten
1/2 teaspoon salt
freshly ground black pepper
250g whitebait
butter or a mixture of butter and oil for frying
Beat egg, salt and pepper together and fold in the defrosted whitebait. Heat a large frypan over a medium heat. Add butter and, when bubbling, ladle in spoonfuls of mixture. Cook for approximately 2 minutes on each side and serve immediately with juicy lemon or lime wedges.
Makes about 12 fritters
Whitebait fritters are by far the best and most popular way to serve this tiny but esteemed fish. The batter should be a very light egg mixture, just holding the threads together. They shouldn\'t be at all floury and it\'s better to have fewer fritters crammed absolutely full of whitebait, than to try to stretch them with more egg mixture. |
