Meatballs with Tomato and Basil Sauce
Ingredients
Meatballs
500g lean mince meat
1/2 cup fresh breadcrumbs
2 T tomato sauce
1 T fresh or dried oregano, finely chopped
1 T olive oil for cooking
1 onion, finely chopped
1 egg, lightly beaten
1 t Worcestershire sauce
1 T fresh or 1 t dried chopped parsley
Tomato and Basil Sauce
1 t brown sugar
5 sprigs basil
2x425g tins crushed tomato
pepper to taste
To serve
500g pkt Couscous or 1 pkt spiral pasta
Method
Combine all meatball ingredients and roll into balls (3 per serve). Heat oil in frypan and cook the meatballs (approx 10 mins). Place crushed tomatoes in a saucepan, add brown sugar and pepper and simmer for 5 minutes on low heat. Add fresh basil leaves at the end ( to keep their color). Place meatballs on cous-cous (recipe on packet), top with tomato sauce and shaved parmesan.
