Beef Stirfry with Snow Peas
Ingredients
250g snow peas
2-3 tblsp peanut or vegetable oil
500g beef stirfry
2 cloves garlic finely sliced
1 leek finely sliced into rings
2 stalks celery cut on the diagonal
12 button mushrooms
soya sauce
sweet chilli sauce
2 tblsp lime or lemon juice
Method
Blanch snow peas in boiling water. Drain. Heat a little oil in a large frypan or wok and when hot add the beef and garlic. Stir fry until the meat is lightly browned, remove from pan and set aside. Add a little more oil and stir fry leek until just softened, add celery and mushrooms and stir fry for 2 minutes. Add the soya sauce, chilli sauce and lime/lemon juice to pan. Return beef and heat through. Serve immediately with steamed rice and topped with the snow peas. |
