Stirfried Beef with Cashews
500g beef stirfry
2 Tbsp oil
½ Tbsp chopped garlic (about 2 fat cloves)
1 onion, thinly sliced
½ cup roasted cashews
1 tsp chilli paste
1½ Tbsp fish sauce
1Tbsp dark soya sauce
¼ tsp salt
1 red pepper
½ cup spring onion, sliced into short lengths
coriander leaves, chopped
Fry garlic in heated oil for 30 seconds, add stir fry and cook two minutes, stirring. Add cashews, chilli paste, onions, fish sauce and soya sauce and salt and cook 3 minutes.
Garnish with spring onion, red pepper - seeded and sliced, and coriander leaves.
