Mediterranean Chicken
Serves 6
This is so easy to make and the flavours are wonderful. If you prefer you can remove the chicken prior to cooking and brown in a fry pan and then place back into the casserole.
Ingredients
8 boneless, skinless chicken breasts, halved
4 cloves garlic, crushed
3 teaspoons chopped oregano
salt and freshly ground black pepper
1/2 cup red wine vinegar
1/2 cup olive oil
1 1/2 cup pitted prunes, chopped
3/4 cup dried apricots, chopped
3/4 cup green olives, pitted
1/4 cup capers
4 bay leaves
1/2 cup brown sugar
1 1/2 cups white wine
Method
Combine all ingredients in a large casserole dish and leave to marinate in refrigerator overnight.
Preheat oven to 180 C and cook for 1 hour. |
