Red Cooked Chicken Nibbles
Ingredients
2 tablespoons tomato sauce
2 cloves garlic, crushed with a little salt
2 tablespoons fresh crushed ginger, grated
4 tablespoons dark soy sauce
2 tablespoons oyster sauce
2 tablespoons brown sugar
2 teaspoons white wine vinegar
4 tablespoons oil (olive or peanut)
2kg chicken nibbles or wings
Method
Mix all the marinade ingredients in a large bowl until well combined and place the wings in the mixture to cover. Cover with plastic wrap and refrigerate. Stir occasionally so the wings are well marinated.To cook, take the wings from the marinade and place in a large, deep oven dish. Spoon over the marinade and cook in a preheated oven at 200°C for 40-45 minutes until golden and slightly crispy. Serves 10 as a nibble.
