Spicy Chicken Thighs
Boned chicken thighs are a flavoursome treat and cook easily on the barbecue. Spice them up with this marinade and serve with a cooling salad.
Ingredients
3 cloves garlic, crushed
6cm piece ginger, finely grated
2 teaspoons turmeric
2 teaspoons garam masala
zest and juice of 2 limes
3 tablespoons light olive oil
salt and freshly ground black pepper
1kg skinned and boned chicken thighs
1 cucumber, peeled and finely sliced lengthwise, discarding seeds
1 large cos lettuce, sliced
1 cup mint leaves
juice of 1 lemon
3 tablespoons extra virgin olive oil
2 cup yoghurt to serve
Method
Mix together the garlic, ginger, turmeric, garam masala, lime zest and juice, olive oil and salt and pepper in a bowl. Place the chicken thighs in this marinade, turning to coat well. Refrigerate overnight or for at least 1 hour.
Heat the barbecue to provide a gentle heat, place the chicken on the grill and turn occasionally. The chicken may stick to the grill but don’t try to prise it off. As it cooks it will become easy to lift and turn.
Toss the cucumber, lettuce and mint leaves together with the lemon juice, olive oil and plenty of salt and pepper.
After about 15-20 minutes, or when the chicken is thoroughly cooked, place on a serving platter alongside the salad. Hand round a bowl of yoghurt to spoon over the chicken. Serves 6-8.
